This post is sponsored bydiscover the kitchen. As always, all opinions are entirely my own. My family has relied on Explore Cuisine's Bean, Lentil, and Chickpea Pasta for over four years as a quick and easy solution to gluten-free meals, and they're still on our nightly rotation. Thank you for supporting Flippin' Delicious™ and the businesses I love to have in my pantry.

This Gluten Free Greek Pasta is one of our quick and easy gluten free dinners! I love that it is full of veggies that my kids will touch and that it is so quick and easy to make.

Best of all, dinner is ready in less than ten minutes! I throw the pasta into boiling water and when it's perfectly al dente, everything else is done.

While the pasta is cooking, all I have to do is chop up some cherry tomatoes and a cucumber. Maybe chop a red onion.

I love that the children help me prepare the ingredients! I've found that if they help make dinner, they're more likely to eat! They can easily cut cucumbers and tomatoes with a butter knife and love to be involved and help!

This gluten-free Greek pasta recipe is easy to adapt to your family's preferences. We do it a little different every time! These are some of our most popular supplements.

  • cherry tomato
  • chopped tomatoes
  • Chopped pepper
  • sliced cucumber
  • Red onion
  • Garbanzo
  • feta cheese
  • Parmesan
  • artichoke hearts
  • oliva
  • capers
  • sliced peppers

The feta is completely optional, but I love the salty flavor and creamy texture it adds. I'm putting it aside because one of our daughters is dairy free.

With no feta, this gluten-free Greek pasta is vegan too!

A regional restaurant is a great Greek sauce that our family loves. This is how we usually prepare our Greek pasta, but in case you don't have anything like it in your area, I wanted to create a simple vinaigrette with similar flavors.

I mixRed wineVinegar, oregano and a little honey and pepper in my blender. While mixing, I slowly poured in the oil in a steady stream to prevent it from separating. She made the perfect easy vinaigrette and was ready in just a few minutes! If you have a Greek sauce (or any other sauce) that your family loves, use that.

Why do we need quick and easy gluten free meals?

The following situation may sound very familiar to you.

You pass the school bus, run home, and then walk into the house with kids and backpacks in every direction. A boy asks for a sandwich and says that he is hungry. They rummage through backpacks to make sure kids with homework get it done, look for teacher notes, and clean out empty lunch boxes.

It's a time of pure chaos, complicated by the ticking of the dinner clock and after-school evening activities (sports, Boy Scouts, you name it).

My children come home from school in the late afternoon. When we get home, everyone is already hungry. I have two options.

  1. give them a snack and they won't have dinner.
  2. keep them waiting for dinner and take care of the crab.

I usually try to keep them waiting for dinner and try to have dinner ready as soon as we get home. When I plan ahead and put something in myinstant potor the slow cooker is easy. But on days when I'm running errands all day or working from's a struggle.

The great truth is that dinner time has always been short. It was always a struggle! When I was at school, I barely had time to eat, let alone cook. When the kids were younger, I would struggle to eat a healthy meal with a tired and hungry baby or toddler in my arms.

I suspect our lives get busier at lunchtime as our family ages. More extracurricular activities and more places to be. More tasks.

To calm myself down during the chaos of dinner, I always try to have ingredients for a quick and healthy meal in my pantry.

Explore the Kitchen: A Smarter Way to Cook Pasta

I found out firstdiscover the kitchenwhen she was pregnant with Mrs. T, four years ago. I noticed the protein and fiber in the packet! She was pregnant and was chasing a two year old around the clock. She was tired and still trying to provide my body with the nutrients my baby needed. When I am pregnant I feel much better when I eat enough protein, but it was very difficult for me to eat protein because nothing with meat tasted good. Packed with protein and fiber, Explore Cuisine's noodles seemed like the perfect combination! When I found out, we had dinner at least once a week for the rest of my pregnancy. Explore Cuisine pasta still regularly makes it to our family's table.

Exploring the kitchen is very easy. It's so easy to get dinner on the table in less than ten minutes by combining a few fresh ingredients while the pasta cooks! It's faster than driving and definitely a healthier option! In addition to being higher in protein and fiber, it's also organic, non-GMO, and vegan.

We have served the Explore Cuisine masses in many ways over the years. Sometimes we just open a bottle of pasta sauce and say it's good!

We also love to mix it with pesto or butter and cheese. Sometimes I get some veggies high by tossing them in some pumpkin puree.

Explore Cuisine pasta is actually one of our favorite camping dishes! I just get out a pot of pasta sauce and add some edamame or adzuki bean spaghetti and cook until tender. What a quick and easy meal! Last month we were in Carlsbad Caverns and I let it boil while we set up the tent. Dinner was ready first and we were done and cleaned up with plenty of time to drive from our camp to the caves to watch the bats go by.

Because Explore Cuisine pasta is so much higher in protein compared to regular pasta, we usually have a vegetarian meal and skip the meat!

In all the ways we love Explore Cuisine's Bean, Lentil, and Chickpea Pasta, this gluten-free Greek pasta is one of our favorites. It combines my kids' favorite vegetables in a light and flavorful vinaigrette.
