While the pasta is cooking, all I have to do is chop up some cherry tomatoes and a cucumber. Maybe chop a red onion.

I love that the children help me prepare the ingredients! I've found that if they help make dinner, they're more likely to eat! They can easily cut cucumbers and tomatoes with a butter knife and love to be involved and help!

This easy gluten-free Greek pasta recipe puts quick gluten-free meals on the table in less than ten minutes!

Ingredients

  • 1 package Explore Cuisine Lentil or Chickpea Pasta (I used the Green Lentil Penne, but both are delicious)
  • 1 cucumber
  • 1 liter of cherry or grape tomatoes
  • ½ small red onion
  • Greek Sauce (Store Bought or ½ Homemade Greed Sauce Recipe Below)
  • Feta cheese for serving, optional

instructions

  1. Place pasta in boiling water and cook according to package directions.
  2. While the pasta is cooking, slice the cucumber and remove the seeds, cut the tomatoes in half and chop the red onion.
  3. If you're making your own homemade Greek vinaigrette, use the recipe below.
  4. Drain the pasta and immediately mix with the Greek sauce. Add cucumber, tomato, and red onion. Add feta if using.

Easy Greek sauce made with red wine vinegar, extra virgin olive oil, oregano, pepper, and a touch of honey mixed together!

Ingredients

  • ¼ cup red wine vinegar
  • 1 teaspoon dried oregano
  • 1-2 teaspoons of honey (optional)
  • pepper to taste
  • ½ cup of extra virgin olive oil

instructions

  1. Put all the ingredients, except the oil, in the blender.
  2. Mix on low heat, then slowly drizzle in the oil in a steady stream while mixing.
  3. Mix for an additional 30 to 60 seconds or until dressing does not separate immediately.

Makes ¾ cup. You only need half a Greek sauce recipe to make my Gluten Free Greek Pasta Recipe. Store leftovers in the fridge, shake to recombine.
